It's still freaking cold here in Germany and I am so sick of it! Because there is no sunny weather and no beach in sight I decided to warm up from the inside to brave this cold and grey weather.
In autumn I love to make pumpkin soup because it's eutrophic, healthy and makes you full.
But when I saw a hokaido pumpkin in the supermarket yesterday I wanted to cook a soup and decided that it's not only good for autumn but for every cold day!
I want to share the recipe with you because I love this soup and it's so easy to recook!

I know it doesn't look that delicious because of it's color but it is!
Pumpkin Soup Recipe:
ingredients:
1 onion
1 Hokaido pumpkin
1/2 sweet potato
2 tsp. vegetable broth
boiling water
native olive oil
curry, thai curry, pepper, sea salt
At first split the pumpkin half and remove the inwards. Now cut it in broad cubes. You don't have to peel the pumpkin (that's why I love it!) but you can if you want to! Peel the sweet potato and cut it in cubes as well. Now cut the onion in little cubes and roast them gently with a little bit olive oil. When the onions are softly brown add the pumpkin and simmer it for about 5minutes. After that add the sweet potato cubes and add the boiling water so that it covers everything. Add 2tsp. vegetable broth and cover the cooking pot. Let everything cook for about 20 minutes till it has a kind of pulpy consistence (everything looks a bit slushy now). Now add salt ( I always use sea salt because it's more healthy!) and as much curry, thai curry and pepper as you want to.
If you like the flavor add everything in the mixer till the soup has it's pulpy consistence.
